Salmon with Cream Sauce

The set-up

Salmon can be tricky at times especially when it comes to how to season it. With this recipe, you will be wanting more before finishing the first piece!

If you buy just a big piece of Salmon, you will need to cut it up into pieces for each person. You will need a large sized pan to cook as many pieces as you can at one time (saves time). Have your seasonings laid out. You will need a cooking sheet and tin foil at the ready to place your Salmon on after you sear the skin. Set oven to 375°. Once ready to make the Cheese Sauce, you will need to either clean the pan you were using for the Salmon or have a separate pan at the ready. Be sure to have Extra Virgin Olive Oil and at least two sticks of Butter with you in case you want to add more.

The Process

Take your old bay seasoning, salt, pepper and sprinkle it on both sides of the Salmon. Heat pan to medium heat, pour 2 tablespoons of Extra Virgin Olive Oil and a quarter stick of butter in to pan. Cook skin side of salmon for 5-10 min or until done to your liking.

Once done, cooking skin side only, place skin side down on a cooking sheet with tin foil (so it doesn’t stick to sheet). After all salmon has been seared, in the same pan, sautee chopped onion and mushroom with a quarter stick of butter. Pour some lemon juice over every piece, add onion, mushrooms, and a slab of butter and Parmesan cheese. Put in oven at 375° for 15 minutes or baked to your liking.

While Salmon bakes it is time to make the cheese sauce!

In a separate pan (or wash out the same one you used to sear the salmon) on medium heat put half a stick of Butter, half of the container of Heavy Whipping Cream and bring to a boil. You can add Salt and Pepper if you wish. Once to a boil, add Parmesan and Mozzarella. Be sure once cheese is melted that you keep stirring so it does not stick to bottom of pan. After Salmon has baked, take out of oven, put on plate, lay cheese sauce over top and enjoy!

Side note

You can use Parsley or any sort of herb in your cheese sauce to give it extra flavor. I usually put Parsley or I will do Basil and Oregano. You can also use any sort of cheeses you like, it does not have to be Parmesan and Mozzarella. I do not put measurements for cheese because I feel cheese is different for each person, some may like it very cheesy. While others may like the flavor but not overly cheesy. So when it comes to cheese, use your own judgement. Hope you enjoy!
