Parmesan Crusted Chicken Strips

2 eggs

¼ cup water

4 cups parmesan

4 boneless skinless chicken breasts

Chicken seasoning

Salt

Pepper

Extra Virgin Olive Oil

1 stick of Butter

The set-up:

This is a very tasty recipe and a great way to use cheese as your breading for doing the Keto Carnivore diet!  You want to start by fileting your chicken breasts then depending on the length you want to cut those in half.  Mix your two eggs and 1/4cup of water in a plate to dip your chicken breasts in. The water adds extra liquid to the egg mix so it will last longer.   Spread your Parmesan on to a plate to lay breasts on for crust.

The process:

Set pan on stove set heat to medium, pour extra virgin olive oil and a quarter stick of butter in pan. 

While pan is heating up, lay strips in the egg/water mix and flip so both sides get mix. Take strips out and season with salt, pepper, seasoning of your choices. Once seasoned, lay in plate of Parmesan, spread on top of strip so both sides have cheese.  Once cheesed, set in pan. Cook on one side until chicken is cooked thoroughly, then flip and repeat.

Side note: you will want to set oven to 350° for the thicker strip pieces so if you feel the middle should cook longer, you can set it on a cooking sheet and put in oven while next set of strips cook. Also, you will want to use a metal spatula to get strips out of pan; cheese will stick to pan. As far as the Olive oil, you will add 2 tablespoons to every quarter stick of butter you use. As you cook, you will need to keep adding butter and EVOO.  It can be messy but it is so worth it!!
